1988 Cadillac Seville uses a rear caliper that will fit on the 1995 FWD front hub and work with the FWD front brake disk. It has an integrated cable activated e-brake.

"What are my best options for tire and wheel sizes?"
The majority of Z34 wheel upgrades allow up to 18 inches with clearance. Larger than 18' wheels and your most likely going to have some rubbing issues, although W-bodies have had up to 20 inch wheels on them. A safe tire to run with a 17' wheel is a 245/45 or 245/55 tire to maintain close to stock clearance, while a 18' wheel can handle a 245/45 tire and be close to stock height. The lug pattern for the Z34 is 5x115 with a 38mm offset. Basically any wheel that has an offset LOWER than 38(37,36,etc.) will clear the calipers and fit properly, while any higher and you "may" have to modify or shave your calipers. A 5x114.3 wheel WILL fit the Z34 if you use hub centric rings to keep the wheels centered and tight. Hub centric rings are usually provided by the wheel manufacturer or store where you purchase your items and should usually be free of charge or else relatively cheap.

"What are some good aftermarket wheel options?" I am a huge fan of simple 5 star wheels, and although its a matter of your personal preference any aftermarket wheel will most likely look better than the stock Z34 rims. Some wheels can be found for a discounted price on other W-body related car sites such as Pontiac Grand Prix pages due to the fact most W-bodies have the same 5x115 bolt pattern.
